Food Safety Management Services

A. HACCP Consultant, HACCP certification [Levels 3 and 4]

We offer the following Awards that enable business owners and managers to develop a food safety management system based on HACCP principles. It is recommended that Candidates for these Awards have at least an understanding of basic food hygiene and safety principles (i.e. a Level 2 Award - better still, a Level 3 Award in food safety from one of the awarding bodies).

1. Level 3 HACCP Qualifications offered by the Chartered Institute of Environmental Health (CIEH) [UK and overseas students]
CIEH Level 3 Award in HACCP for Food Manufacturing

The training programme is designed to ensure that candidates acquire the necessary knowledge and practical skills to implement a HACCP Plan in their food business.

The course covers:

  • Codex HACCP and its place within food manufacturing
  • How to develop, implement and maintain HACCP-based systems

Candidates will be assessed by a practical assignment that requires the development of a HACCP Plan.

CIEH Level 3 Award in HACCP in Catering

The Award is aimed at business owners, managers and supervisors working within a catering environment. The course covers:

  • How caterers can comply with EU legislation
  • Provides caterers with a thorough understanding about how Codex HACCP principles can be applied flexibly within different types of catering operations

Candidates will be assessed by a practical assignment that requires the development of a HACCP Plan relevant to a catering operation.

2. Level 3 HACCP-based qualifications offered by Highfield Awarding Body for Compliance (HABC) [available for UK students only]
Level 3 Award in Supervising HACCP for Catering

The qualification is suitable for supervisors, managers, chefs, trainers, and HACCP team members working in catering businesses.

This qualification will provide candidates with the knowledge to develop, implement and maintain a food safety management system based on Codex HACCP principles within a catering environment. Candidates will learn about the legal requirements regarding HACCP and the flexibility permitted in different types of catering businesses, the importance of pre-requisite programmes and the role of supervisory staff in monitoring, implementing corrective actions, completing and checking documentation and verifying and reviewing the HACCP system.

Level 3 Award in HACCP for Food Manufacturing

Candidates will learn about the importance of adopting HACCP for product-based and process-led manufacturing operations. This requires that the Candidates thoroughly understand the 12 Codex Step Logic sequence and how it contributes to safe food production. Candidates will learn:

  • how to identify, control and monitor significant hazards at points that are critical to food safety
  • the appropriate action to be taken when critical limits are exceeded
  • the types of documentation and records required
  • an understanding of the need to review the HACCP system at appropriate times

3. Level 3 HACCP Qualifications offered by the Royal Society for Public Health (RSPH) [currently available for UK students only]
Level 3 Award in HACCP for Food Manufacturing

This Award is primarily for supervisors and managers working within food manufacturing. However, the qualification would also be of benefit to those working in catering and retail. Candidates will learn how Codex HACCP provides an effective and practicable management tool for identifying food safety hazards and ensuring that effective controls are in place. Assessment is by a multiple choice examination.

Level 4 Award in HACCP Management for Food Manufacturing

The qualification is mainly aimed at senior supervisors and managers working in food manufacturing. However, the qualification would also be of benefit to those working in catering and retail. The course covers the importance of HACCP-based food safety management procedures, the development and evaluation of HACCP-based procedures and their implementation. Assessment is by written examinations.

B. Auditing Tuition

We offer now offer an auditing course as a registered Centre with the Highfield Awarding Body for Compliance [Highfield.co.uk Ltd]:

Level 3 Award in Effective Auditing and Inspection Skills [available for UK students only]

This auditing qualification is intended for those personnel with supervisory, team leadership, and line management responsibilities for verification, auditing or inspection. The qualification has relevance across all sectors of the food industry.

Management and supervisory personnel will understand and be able to apply the knowledge concerning the role of the auditor in order to carry out effective audits/inspections including the purpose of audits and inspections, benefits and limitations, the auditing and inspection cycle, checklists, information gathering, analysis and interpretation of audit/inspection findings, and writing.

Last year we had the nightmare scenario of actually losing our quality assurance accreditation on the grounds our HACCP wasn't up to scratch. In effect our business was (and with almost no notice whatsoever) shut down - purely on the grounds of non-compliance on what I originally thought were just minor points. I then had a couple of very worrying weeks - where I spent a great deal of time trying to resolve the queries raised by the external auditor's "Inspection Exit Report".

Bob Hutson was recommended to me through an old business acquaintance. To start with Bob came in and gave us a day's on-site consultancy, followed by three months of telephone consultancy. And then Bob came in for a second full day of on-site consultancy to ensure that everything prepared to date was accurate and correct.
