Personal Note from a Technical Manager regarding success at Level 3:
I would like to thank you for all your help with this assignment. I felt that the course made understanding HACCP into an easy, logical approach and I feel more confident when applying these principles with the knowledge I have gained [EM 2008].
Testimonial from Ed!
Last year we had the nightmare scenario of actually losing our quality assurance accreditation on the grounds our HACCP wasn't up to scratch.
In effect our business was (and with almost no notice whatsoever) shut down - purely on the grounds of non-compliance on what I originally thought were just minor points.
I then had a couple of very worrying weeks where I spent a great deal of time trying to resolve the queries raised by the external auditor's "Inspection Exit Report".
Luckily we managed to resolve the issues and reclaim our accreditation, but as I say, it was a very worrying and stressful event and one I didn't ever want to go through again.
So that scare prompted me this year to find a HACCP expert to help me ensure we'd be fully compliant in advance of the external audit.
Bob Hutson was recommended to me through an old business acquaintance and friend of mine who also works in the food industry (training services).
To start with Bob came in and gave us a day's on-site consultancy, followed by three months of telephone consultancy.
And then Bob came in for a second full day of on-site consultancy to ensure that everything prepared to date was accurate and correct.
Although I had only contracted Bob for just two days of consultancy - I'm absolutely staggered by just how much EXTRA support and assistance Bob gave us between the two meetings.
I've used the services of many consultants over the years. But very few of them (if any!) were prepared to go the extra mile like Bob did.
At the time of writing this, our business has just been through its 2006 audit - including HACCP assessment.
And this is what the auditor had to say about our HACCP once her visit was complete (quoting word for word):
"The company has put a lot of work into their HACCP study. The document is very detailed and gives a full account of the procedures in place and methods of monitoring. The study is very accurate and reflects controls and procedures in the store and at intake an out loading"
Other than a very few monitor points which can be very easily rectified, I'm delighted to say that this year we've passed our accreditation with flying colours.
The supermarkets who would like to take our products insist on HACCP...
MD of a West African company:
I received a lot of support from Bob Hutson over an eight-month period. He tutored me by e-mail and telephone to improve my food safety knowledge in order for me to study for an advanced HACCP certificate. Study involved three full intensive one-to-one training days, followed by two months of guided work over the internet to write up my HACCP assignment. I gained a credit pass.
I now had understanding of HACCP principles. I could now write and put in place our company HACCP system. We are an African company who needs to gain big customers in the Europe. The supermarkets in Germany and Sweden who would like to take our prepared fruit products insist on HACCP
